The Indonesian diet is rich in fish & shellfish, vegetables, crispy fried tempeh & marinated tofu, & noodle & rice dishes. Meat is less important: spicy hot, & sour, often with coconut or as stuffing in pancakes or chili peppers. Typical Rijistaffel dishes are described.
