Jakeman has written an intro. to the book & added a biblio. & a glossary to help those who might want to try contemporary versions of Kidder’s recipes. Modern cooks should feel free to make some adaptations to these instructions, for some of the recipes have strong flavors for our bland, modern palates, & the combinations of ingredients are sometimes surprising!
