Food Safety: Risk-Based Inspections & Microbial Monitoring Needed for Meat & Poultry (M&P)
Edward M. Zadjura. The Food Safety & Inspection Service (FSIS) spent about $558 million & 10,750 staff years in FY 1993 to inspect M&P relying primarily on visual methods that may ensure a clean-looking plant environment & M&P products free of visible adulteration, but cannot detect microbial contamination. This report evaluates whether the FSIS’ M&P inspection system makes the most effective use of its resources to ensure food safety, whether M&P plants have programs to test for microorganisms, & whether Hazard Analysis & Critical Control Point, a quality control concept, is an effective approach for ensuring food safety.
