The original 1740 edition of this recipe book, “Kidder’s Receipts of Pastry & Cookery”, was intended as a handbook for the professional cook or trainee chef who might be required to prepare ‘cuisine suitable for the corporate dinners of Aldermen & Lawyers...’ This copy, reproduced in facsimile, dating probably from the 1740s, is from the collection of Oxford Univ. Jakeman has written an intro. to the book & added a biblio. & a glossary to help those who might want to try contemporary versions of Kidder’s recipes. Modern cooks should feel free to make some adaptations to these instructions, for some of the recipes have strong flavors for our bland, modern palates, & the combinations of ingredients are sometimes surprising!
